Simple Meals Using What’s Fresh at Mama Anita’s Farm

These recipes are meant to support the Island Wellness conversation — nourishing food that fits everyday life on Eleuthera, using what’s available right now from the farm.

 A simple, nourishing start to the day.


Uses farm produce such as

Eggs
Peppers
Tomatoes
Onions
Greens (spinach, callaloo, or similar)
Fresh herbs (optional)
 

Ingredients

2–3 eggs
A handful of chopped fresh vegetables
A small handful of greens
Salt & pepper
A little oil or butter
 

How to Make It

Whisk eggs with a pinch of salt and pepper.
Lightly sauté vegetables in a pan until softened.
Add greens and let them wilt slightly.
Pour eggs over vegetables and cook gently.
Fold and cook until set.
 

Tip

Add herbs or a small sprinkle of cheese if available.

A bowl of fresh greens
Chopped vegetables
Olive oil
Lime or lemon juice
Salt & pepper
Simple Dressing

2 tablespoons olive oil
Juice of ½ lime or lemon
Pinch of salt & pepper
 

How to Make It

Wash and chop vegetables.
Toss everything together gently.
Drizzle dressing and mix lightly.
 

Optional add-ins
Boiled egg, grilled fish, beans, or avocado.

Sauté vegetables in olive oil until soft.
Add cooked pasta and toss together.
Season lightly and serve warm.
